Because I use skim milk often, not full-fat milk, the mixture does get icy if I leave it in the freezer too long afterwards. I recently purchased some xanthan gum (a plant-derived thickening agent, only a small amount needed and it's all fibre) so that should help with the consistency. You can honestly do so much with one of these -- fruit sorbets, frozen yogurts, homemade ice cream cakes, etc. Mine only cost me $30 and it's a Cuisinart ICE-25 ( http://www.amazon.com/Cuisinart-ICE-25-Classic-Frozen-Yogurt /dp/B0009VELUK/ref=sr_1_4?ie=UTF8&qid=1344483168&sr=8-4&keyw ords=ice-25+ice+cream+maker ).

If you're just starting out I would definitely try investing in something under $50 just to see how you use it/like it/if it's worth it.
