Parmesean Fish

Serves 4--please note that I "eyeball" measurements, so here are rough ones!

4 portions of a white firm fish (haddock, mahi, cod, halibut, etc....)
mayonaise
greek style seansoning
2-5 cloves of garlic (however much you like)
20 sprigs of italian flat parsley medium chopped
1/2 c panko style italian flavored bread crumbs
2 T olive oil
2 t lemon juice
1- 1 1/2 cup of fresh shredded parmesan cheese

pre-heat oven to 350

spray bottom of baking dish with PAM
place fish in pan and spread mayonaise on top
sprinkle with greek seasoning
place in oven and bake for 10-15 minutes depending on thickness (fish should be firm and turning slightly opaque)

in a bowl combine olive oil, lemon juice, parsley, garlic and parmesan cheese--mix well
toss in bread crumbs but be careful not to break them up too much

remove fish from the oven and place crumb mixture on top of fish--return to oven for another 5 minutes or until golden crusted
