Cappy, you are a genius!  This was pretty easy to whip up and I will get 8 meals out of it to heat up for work.  Absolutely delicious!  Lots of protein and low in carbs.  This will become a staple for me and I highly recommend it!!

Hi,

I used a recipe that I searched on the internet as a start, and then substituted plain greek yogurt for the higher calorie dairy to bring the calorie count down to my range.  Here's a link to my recipe which is on the recipe forum.

Cappy, can you substitute sour cream or cottage cheese for the yogurt?  just wondering......

These are interesting ideas.  I bet the sour cream would work well, although it might add to the calories.  I bet the cottage cheese would change the texture, but it could be very nice in a different way.  Let me know how it turns out.
