Veggies for month 2 and on?

Hi. I'm getting ready to start regular food at the end of the week. I had just learned to cook before my surgery. I am just wondering about the veggies. What veggies do you tolerate well and how do you cook them if you are only going to have a couple of bites?  I have a track record of being very lazy in the kitchen. I have a fear I will just say "it's not worth the effort for just a few bites". 

I do have a decent appetite and tolerate foods fine now-so I think I will have room for a few veggies.

spinach is super easy...lots of nutrition too.  Just put some fresh leaves in a little pot with some water and coo****il tender.  it will wilt down a lot and cook pretty fast.  it is also nice b/c you can just get a bag of it and cook a little each day.

season to taste.

Do the veggies have to be cooked?  Can they be eaten raw?

Much of my veg was raw after the first month, usually in the form a small entree salads with some leftover meat in them - spinach, grape tomato, avo (ok, a fruit technically...) dice pepper, scallions, etc. Or I would stir fry some broccoli and/or snow peas in with some chicken, or pepper and onion strips with meat. One pan cooking made it a lot easier to deal with the small quantities.

Fresh green beans add flavor and heaps of fiber.  Spinach is wonderful because you don't eat much of it, but it's packed with iron.  Broccoli is also a good choice.

I steam all my vegetables in the microwave.  Make sure they're soft, not too crunchy at this stage so that they are easier for your stomach to digest.
