Frisco-PastaLess-Muffin Pan-Lasagna !!!

Well,

I finally tried it.....PastaLess Lasagna.....

Used Crisped Eggplant instead of Pasta (at BrownBlondes Suggestion)

Made Mini Lasagne's in a Muffin Pan !!!!

Each space is 4oz. Perfect !!!!!

**Note: These are filling !!!! I only ate half (2oz.) and the salad.....I was done just right !!!!

Shown here is PastaLess EggPlant Lasagna with Shaved Celery and Radish Salad.

Taste pretty good ! It's been a while since I've had any kind of Lasagna !!!

No real instructions/recipe.....just make Lasagna.....but just use sliced Breaded/Fried Eggplant instead of pasta noodles.....

I dip in egg beaters.....than dredge in ground Lavash Bread Crumbs....than crisp them at med/high heat in Smart Balance Oil.

In this one I have Turkey Sausage, Fresh Mozzarella, Marinara..... I think it was 300 degrees in a Convection Oven for around 40 minutes

The cool thing about doing them in a Muffin pan is you can make a bunch of different kinds!

Then Freeze em !

Looks fab!!!

I have a question regarding the Lavash Bread....ordered and received today. I thought it would be crisper rather than a wrap texture. Do you toast it up in the oven to make it crisp? Seems like I've seen some of your recipes/photos where it appears to be more of a flatbread type thing.  Or did I get the wrong type?

No, sounds like your all good!

Lavash is VERY versatile....

Soft I like to do sandwiches.... Tuna salad-Egg Salad....sliders....

Toast to firm before topping and baking pizza.

Toast/bake dry for crackers and food process for bread crumbs.

I'm experimenting with Lavash Crumbs with pretty good results.....add salt, pepper, garlic powder. I've also added store bought seasoning like Italian Seasoning, Taco Seasoning.....Seems like you can't miss....works good!

Frisco,

As an Italian, I made lasagna all the time - but have been making this basic recipe since surgery, so I KNOW its delicious!  What I love that you did was make the minis, which I hadn't thought of, but will do now, thanks.
