3 months Post Op Food Questions

I'm about at 1,000 calories and 3 to 4 meals per day. Meal size depends on how much dense meat there is. I can eat 3/4 of a Lean C. meal (smaller sized meals) or one very thin slice of bread with PB2 on it. I'm trying to get more fiber in and may settle for a fiber "pre-meal" like green beans or half an apple 30 minutes before my meal. I'm getting real tired of this constipation thing.
I have 3 meals a day with two snacks. One mid morning and one in the evening. But they are not to be more than 900 calories total. I can eat just about anything now as long as I eat slow and take little bites. Meat of all kinds is not problem as long as I don't eat more than about 2.5 ounces at a time. I log everything and plan my meals using MFP. Here is a photo of what I am talking about in meat size
This is a small paper plate and note the scale says 2.5 ounces. More than that and I will barf most times. I would stay far away from bread of any kind. New research is pointing out that wheat of any kind is really bad for humans.

Currently, I'm getting anywhere from 800-1200 calories a day. I'm getting in between 70-100+g protein a day, as well. I don't really count carbs, per se, but I try to keep sugars on the low end. As for food, I eat just about anything. I'm eating on the clock, so every 3-4 hours I have something. I'm probably eating between 1/2 c. to 3/4 c. of food at any sitting, but some foods, like salad, I can easily eat a cup. Some foods, though, I can only have 1/4 c. like roasted edamame or pistachios.
EDIT: Here's my typical schedule:
6-7am: Breakfast
10am: Snack or Lunch
2pm: Lunch or snack
5-6pm: Dinner
7:30-8pm: Snack if I feel that I need it.
