Yummy Protein Packed Peanut Butter Cookies

OK all you PB lovers I have an awesome, yet healthy recipe for you and did I say it's SUPER easy??  So I was paging through one my cookbooks and came across a simple PB cookie recipe so I thought I would tweak it to make it WLS friendly.  Here it is and trust me when I say it's the perfect thing when you need that little bit of sweet without the guilt.

1 Cup PB - must be reg peanut butter
1 egg
1 Cup splenda
1 scoop Unjury protein powder

Drop onto cookie sheet and flatten with a fork, then bake at 350 for about 11 mins.  Nut info per cookie;
124 calories
9 grms fat
4.2 Carbs
1.4 g sugar
6.3 gr PROTEIN

Not bad for a little cookie!  I even took some over to my neighbor who is diabetic and she loved them. Let me know how you like them!

Sounds good I love peanut butter cookies! I am going to try and make it, now I assume you are using the unflavored unjury powder? Thanks great idea!

Thank you! The last time my family made pb cookies I did not thibk it would bother me...well it did so after they had theirs I fed the rest to our dog (4). Now I have an alternative and a great recipe for holiday time. Thanks gaain, Karen

By the way, you don't have to have the protein powder. The original recipe is just PB, egg and sugar.

 i bet chocolate protein powder would make an interesting taste too...

Wow, these are amazing! Thank you so much for posting this recipe! My 6-year old son helped me make them and he LOVED them. I wasn't sure how they would taste so I warned him that they may not taste very good but he thought they were excellent!

I don't have Unjury protein powder so I used one of my shake packets (they're actually made by my gym) that is probably similar to Unjury and decided to use chocolate. I didn't really notice a chocolate taste but I'm guessing it added to the rich flavor of the cookies.

Also, when you did the Nut info, how many cookies did you base that off of? I made tablespoon size ones so I'm not sure what the comparison is.

Do you happen to have any other cookie/treat recipes that you want to share? This is definitely the kind of treat I love to give my kids because they're very healthy and easy to make!
