Diet Cola Chicken Recipe...Yummy!!!!
I found this recipe, I can't remember where, but I thought I would pass it along.
4 (4oz) boneless, skinless chicken breasts
12 oz Diet Cola (I used Diet Coke)
1 cup ketchup
2/3 cup finely chopped onion
2 tsp cider vinegar
1/4 tsp hot sauce
Mix together the ketchup, diet cola, vinegar, hot sauce and onions in a large skillet. Add the chicken breasts and bring sauce to a boil over medium-high heat. reduce to a simmer and cook for 50 mins, until the chicken is tender enough to split with a fork. The sauce will reduce by half and be thicker. Serve each breast with a quarter of the sauce.
*I used Diet Coke, but next time I'm going to try Diet Dr. Pepper. I also used minced onion because that's what I had on hand. After the sauce came to a boil I turned the chicken a couple of times because the chicken was thicker. I don't know if it made a difference or not. This was REALLY good! Enjoy!
