New Toy- Joule (sous vide cooker)

New toy that is a great tool to have for those of us who love tender cooked proteins! Joule is a sous vide appliance. If you are not familiar with sous vide it just means that you put your food items in a bag like a Ziploc or vacuum style sealed bag and cook it in a water bath. The  water is held at a very precise temperature, and it gives you a highly consistent result every time. I am prone to really overcooking meat, and holy yikes my stomach does not like that one bit! This cranks out crazy tender steak even when using sirloin. Anyway, if you are one afflicted with kitchen gadget disease it is a must have now in my book. At least this doesn't require a ton of storage space :)

Are Ziplocks food-safe at high temperatures?

This article says "yes," as long as the bags you use are labelled as "microwave-safe."

I use the slider-top Ziploc bags (box says microwave safe) with a little reusable vacuum valve that I put into it. Works like a charm!

The bags have to be food grade, no bpa. Ziploc brand is Ok- the heavier ones that are labeled for the freezer. Off brand bags similar to Ziploc should be avoided.

I absolutely adore mine! My favorite is fish filet with a pat of butter, turns out nice and juicy without getting dry :)

Have not tried fish yet, but am looking forward to it. Did pork chops tonight, and probably for the first time in my life they were not dry/tough. Fish is another one I am terrible at cooking, either over or under done and never at the right amount. I am also toying with the idea of doing the turkey this way, but slightly afraid of a colossal fail and I have family coming over. They would understand, but seems like a gamble.

This is how my son (a chef) cooks the MOST AMAZING braised short ribs.  I'd never heard or seen such a device previously, but WOW!

My nephew is a chef as well. The first sous vide item I had first was a brisket he prepared. It was insanely delicious.

Enjoy!  You sound like a great cook.  Everything I do has to be super simple or made by my son. I can cook (but don't enjoy it).  My husband used to do all the cooking.

Sous vide is the only way I eat chicken breasts.  It is life changing!  I actually have the instant pot sous vide appliance.  Definitely try chicken breasts!

Eggs, too.  Eggs come out amazing sous vide.  You will become utterly spoiled, lol.

I follow a ketogenic diet post-op. I also have a diagnosis of binge eating disorder. Feel free to ask me about either!
