What cha eating today, VSGers? - Friday

Hi All,

I've been so good on my diet this week, and every day the scale has been crawling up a few tenths.  I keep reminding myself what I tell everyone else:  "That if you are eating less calories than you are burning, you are burning fat, no matter what the scale says."  But its been several days.  Its so frustrating. 

I was getting tired of my usual recipes so I tried a new one today, and its really nice.  Its on the recipe forum.  Here's the link:

I also just finished the last serving of the Orange Balsamic Chicken.  Its a winner too, but it has some carbs due to the orange marmalade.

So today I continue my weight loss diet

Breakfast - 4 ounces of salmon

Lunch - orange-balsamic chicken - yum

2nd lunch/snack - meatballs and parmesan cheese

Dinner - Dijon and lime chicken - yum

vitamins - as always good

water - fine

exercise - still walking a bit

Hi,

I love it that you post these - so please don't stop and don't get frustrated - like you said.. take your own advice.  Us newbies appreciate all you do.

b-yogurt - but didn't measure it, and I know it wasn't enough so I was not satisifed.
s-protein drink
l- actually took a friend out today - we went to applebees - so, we did the choke and spinash dip - i had 6 chips with a little bit of dip on them and she ate about the same.  Then I had a 1/2 bowl of the french onion soup, left the bread and cheese for the dishwasher.
s-PB with carrots
d-I'm going to try this one tonight, but I'm going to add a little bit of cooked ground turkey and ricotta.  YUM..

Those pizzas made on zucchini's look great.  I'm going to try that one day!

It's so maddening when you are doing everything right and the scale doesn't move!  Even when I know I'm on point with my plan and I'm burning fat it still ticks me off ;).  You are such an inspiration Carol!  I love your posts on this board!

B: Quest bar- needed an on the go choice as I had to be at my daughters school for career day early!

L: crust less cheeseburger quiche.

D: Sausage stuffed zucchini boats from skinnytaste.com.  Lots of great recipes on that site if you haven't checked it out.

Water: doing good

Vitamins: half done.

Exercise: not today since had to pick my son up from school not feeling good.  Glad I did a good 4 mile workout yesterday!

It's great- uses chicken sausage so low fat and cals...one "boat" fills me up about perfect.  She also has an enchilada stuffed zucchini I want to try!

I've never posted on the daily menu thread, but it's never too late to start, so here goes! The dijon/lime chicken sounds delish, so I'm looking forward to trying that soon. I'm trying to lose a few pounds of regain, so this plan is pretty strict (for me).

Breakfast - Coffee (several cups) with sugar free Coffee Mate - have to count that since it still has a tiny bit of carbs.  I'm not hungry in the morning, so I save my calories for later in the day.

Lunch - 2-3 oz chicken (Costco - precooked grilled chicken pieces) with a little bit of Trader Joe Yellow Curry sauce, 7 Blue Diamond Wasabi almonds (1/4 serving)

Afternoon snack - cheese stick, another 7 almonds

Dinner - (same as lunch) chicken with curry sauce, 7 almonds

Evening snacks (this is my difficult time) - final 1/4 serving of 7 almonds, Dannon Light n Fit Greek yogurt coconut flavor (this is my sweet treat).

Vitamins - will choke down my chewables when I have lunch.

Water - always a struggle, but between water and lots and lots of coffee between meals, it's on track

Exercise - done!  (30 min fast walking on treadmill, 30 minutes weights,planks,etc every morning M-F)   I watch "my 600 lb life" while on the treadmill sometimes, and it's fantastic motivation to pick up the pace and work it!

This has been a good week, and my scale is showing me how well I've done.  Boo yah!  As I type this, I am waiting for sugar free meringues to come out of the oven.  If they are good, I will be using them a lot for snacks, because sometimes I just want something sweet at night with my hot tea.  

B: egg with chopped veggies and small amount of ham with ¼ of an avocado

L: sliced turkey with one slice Swiss cheese, sliced tomatoes and green chilies

D: Leftovers from lunch with one chicken thigh and brussels sprouts

S: Light and Fit Greek cherry yogurt

S: home made beef jerky

V: right on

E: none today, because I hurt my ankle yesterday hiking

W: right on

5' 5" tall. VSG on August 4, 2015/ Starting weight 239.9/ Surgery weight 210.9/ Current weight 137.4/ Goal weight 140/ No longer overweight, now a NORMAL weight. Now that I'm at goal, it's time to move on to maintenance!!!!!!!!

If the sugar-free meringes work out, please share the recipe.  They sound so good to me.
