My new favourite hot weather meal

 I haven't wanted to cook so I've started eating salads more frequently as a meal and wow, am I ever enjoying this very simple but totally delicious salad...

1 hard boiled extra large egg
1/4 light mozzarella shredded
1/2 cup baby spinach
1 teaspoon Renee's gourmet balsamic dressing

Nutrition: 190 calories, 5 carbs, 13g fat, 17g protein

For me, its a satisfying substitute for those spinach saalds that you get in restaurants that end up having a million calories.  Just wanted to share in case anyone is looking for a good meal that doesn't require cooking.  (well, I boiled the egg ahead of time, lol)

That sounds great and you could always sub in some shrimp or chicken etc., for the egg.

I know the feeling. I don't even know the last time I turned on my oven or stove. I make scrambled eggs in the microwave far too often.

I eat salads a lot for a meal. Sometimes I BBQ a ton of chicken breasts, slice them and freeze them in meal size portions for me and my family. Makes it so easy to thaw some for a salad or a chicken quesadilla. The family uses it for salads or to start a nice chicken, broccoli pasta dish with some herb and garlic cream cheese.
I add sliced almonds or sunflower seeds or pumpkin seeds to to my salads for crunch.
Somtimes some berries or dried fruit like cranberries or cherries too for variety.
