Thought I'd Share a Recipe From My Support Group :)

A lady in our support group was given this recipe by her sister.  There's quite a few of us that have tried it and liked it.

CRAZY GOOD BLACK BEAN BROWNIES:

19 oz (540 ml) can black beans, rinced and drained
4 eggs
1 cup splenda
3 Tbsp cocoa powder
1 tsp baking powder
½ tsp baking soda
2 Tbsp olive oil
1 Tbsp vanilla ¼ cup low fat cream cheese

Put all ingredients into blender, adding the beans last. Pour into 8X8 inch sprayed nonstick pan. Bake at 350degrees for 30-40 minutes, or until toothpick inserted into the centre comes out clean. These brownies are not sweet, so depending on your taste you may wish to add more splenda.

Makes 16 servings (73 calories, 4 g fat, 1 g sugar, 4 g protein)

Hubby added 1/3 more splenda and 1 more tbl c0coa powder so you may need to adjust to taste :) Some good fibre I'm sure :)

Hi Dawn...do you taste the beans?? or is it disguised by the cocoa powder?  I've bookmarked it anyway!!  I'm always up for trying a new recipe...Patti K.

It's not the beans that concern me, it is the splenda. I have never tried it before, what is the taste like?

It's a sweetener.  Tastes sweet.  I don't know what else to say about splenda? LOl.  It's just very sweet.

It's the only one that I find is THE closest to the taste of sugar! ;)

It says on it: "as sweet as 2tsp (10ml) of sugar)" for a packet.

I'm so leary of all sweeteners because they all taste nasty to me. I can't drink or eat anything that has any of that stuff in it BUT I haven't tried any splenda products yet. Guess it is worth a shot at least once.

Hi Dawn; this recipe sounds interesting. By chance, did you figure out the carbs per portion?

Nope - you can throw it in one of those recipe calulators though - that's the nutritional information that came with the recipe.
