Being the gluten free freak I've become (most of the time, of course) I've learned that I can eat many, many recipes and just omit the pasta or rice. My current fave is a version of Stroganoff made with ground beef. Click here for recipe I make it and just serve it in a bowl for myself, and serve it over egg noodles or rice for my family. You can do spaghetti meat sauce the same way. I love it without the noodles. Maybe I'm just weird! Lol! I eat burgers and sandwiches without the buns, pasta sauces without the pasta. It's an adjustment, but you will grow used to it, I promise! My kids would scold me if I were to serve my sauce over noodles or eat a hamburger with a bun. They just KNOW that I don't eat that way anymore and it would appear strange to them if I did.

Here are a few I had handy ....
1 cup chopped onions
2 cups canned crushed tomatoes
1 cup frozen peas
1 cup diced potatoes
1/2 teaspoon each cinnamon, tumeric, ginger
1 tbsp curry powder
salt and pepper to taste
Add tomatoes, peas, potatoes and spices along with salt and pepper to taste.
Bring to a simmer and cook for 25 mintues.
Add water if it becomes too thick. It should have the consistency of chili.
Serve over brown rice or whole wheat couscous.
Number of Servings: 6

8 oz cream cheese
1 cup milk
can of cream of mushroom soup
garlic powder
1 cup mushroom pieces
salt
Combine soup, cream cheese and milk in blender. Pour over browned beef, mushroom and corn and mix together-- heat all the way through on stovetop on low heat-- add garlic powder and salt to taste.
Morrocan Chili
2 T EVOO (Extra Virgin Olive Oil)
2 # ground beef
S & P
2 T chili powder
1/2 T ground cumin
1 T ground coriander
1/4 t ground cinnamon
1/2 t paprika
1 bay leaf
1 large onion, chopped
1 SWEET red pepper, seeded and chopped
2 cloves garlic, finely chopped
1 lemon, jested and juiced
2 T Worchesterchire sauce, eyeball it
1 (14-ounce) can tomoto sauce
Heat skillet with EVOO and add meat and brown. Season the meat with salt and pepper to taste, chili powder, cumin, coriander, cinnamon and paprika. Add the bay leaf, onions, red pepper, and garlic to the pan. Coo****il onions are soft, 8 minutes. Add lemon juice and zest, Worchestershire sauce and tomato sauce. Stir and reduce heat to simmer.

I've had several things. The chili dog pie is really good (I make it with skinless sausage instead of hot dogs). The italian casserole is also good. I double up on the meat for that one.
